The search for easy quick HEALTHY lunches and meals is ongoing around here. I'm still working on our families healthy eating reboot. One of my challenges is actually planning to cook for our lunches. Sandwiches are my son’s standard daily lunch but I want him to be able to make other recipes. So I'm on the war path. He learned to make Low Carb Freezer Chimichangas and those served us well in November and December. We just did another batch to restock. Now it is time for a new recipe(to him) Chicken Quesadillas are easy and quick to fix.
Plus he loves them.

Chicken Quesadilla Freezer “kit”
Actually Chicken Quesadillas are NOT a great freezer meal because the liquid tends to be absorbed by the tortillas and make them mushy. However it is a GREAT freezer “kit” recipe. By making the kit ahead of time, you will have all the ingredients in the freezer with some of the work done to make this a FAST meal.

Low carb quesadilla freezer meal kit
Low Carb tortillas
4 cups of shredded cooked chicken
2 cups of your favorite salsa
1/2-1 cup sour cream
1 cups shredded cheddar or jack cheese
1. Cook your chicken. Really any type of chicken works. Breasts, roasted or even canned. Chop or shred the chicken. I like to throw a 4-5 frozen breasts in the slow cooker on low before breakfast with some broth or water. By lunch or mid afternoon they are ready to shred. That is easily done by my Kitchen Aid Mixer.(aff)
Ever used a Kitchen Aid mixer? This thing is my right arm. Literally. I have a cranky shoulder and it hurts to hold a regular mixer so my Kitchen aid does all the heavy mixing work. LOVE it!
2. Add the remaining ingredients except for the tortillas. Mix well.
3. If you are eating these right away then spread the 1/3-1/2 cup of the mixture over 1/2 of the tortilla. Fold the tortilla in half and place in a heated skillet or griddle.
4. Cook 3-4 minutes on each side or until the tortilla gets crispy. Time to eat!
Fill a quart size freezer bag. If you do a lot of freezer cooking then you might want to look at this cool Baggy Rack Clip. (aff) It makes filling freezer bags a cinch! Especially if you do meals that have a liquid ingredient.
