Lemon Chicken

Funny that in my last post about Recipe Notebooks started with "I love to cook."  That's how I felt. 

Yesterday.

Today I feel lousy and I really don't want to think about feeding my family.  Lucky for me I have a stash of Freezer Meals that I can use on days like today.

So the meal I threw in the crock pot about 3 hours ago is ready and all I have to do is put together a salad, heat up some veggies and rice. 

This meal doesn't have a lot of fat or carbs(FP) so you can change what kind of meal you are having based on the sides that you serve.

Lemon Chicken

1 tsp dried thyme leaves

1 tsp salt

1/2 tsp pepper

1/8 tsp garlic powder

1/3 cup lemon juice

1-1/2 pounds boneless, skinless chicken breasts

To prepare

Mix all the spices in a 1 quart plastic freezer bag.  Add chicken pieces & freeze.

To serve

Thaw.  Preheat oven to 375 degrees.  Arrange chicken in 8x8 inch baking dish treated with nonstick spray.  Pour liquid over the chicken.  Bake uncovered for 30-35 minutes or until chicken is tender and no longer pink. 

OR

Don't thaw.  Put the frozen chicken in the crockpot for 4-5 hours.  Perfect moist chicken every time!
