Once a month we go to Kansas City and take lunch. Sometimes we take sandwiches but that doesn’t work for some of my peeps who don’t like/can’t have sandwiches. Our solution? Brown Bag Chimichangas from the freezer.
If you knew me in real life you would realize pretty quick that my motto is Keep it Simple Sweetie!
In the kitchen that means FREEZER MEALS as much as possible. Crockpot meals are also another BIG way to reduce my meal preparation stress. Needing to remember to thaw meat and have ingredients doesn't make my life simple. In fact it causes me considerable stress. (can I get an AMEN?) So in the fall, I order chicken from Zaycon Fresh and process 80 pounds of chicken into freezer meals over a few days. Why do I order that much chicken? Well let me tell you!
This is truly one of the easiest meals I make. Quick cooking meal with a few ingredients with the option to be a freezer meal makes it a win every time!
A while ago a follower on the Day to Day Adventures Facebook page asked if I had a sugar free BBQ sauce that I used. Sadly I had to tell her no. So I went to work converting that old recipe to work for our new way of low glycemic eating.
We used to eat a wonderful recipe that was part of my freezer cooking list. Sadly it had more sugar in it than I like to feed my peeps now!
My favorite food is peanut butter.
Ask my family—they know mom “needs” her peanut butter.
But what is a girl to do about peanut butter cups when she goes off sugar and starts to follow the Trim Healthy Eating plan?
Well you make your own.
